Thick Soft

My chocolate chip cookies are always flat and crispy instead of thick(ish) and soft. Any suggestions?

I follow the TollHouse recipe to the mark, but they NEVER rise! Everyone else are great but mine. Can anyone help me?

Whether cookies come out soft and chewy and/or stay soft has a lot to do with the ingredients you use. For example, brown sugar (and sweeteners such as honey, molasses, etc.) have more moisture than regular white sugar, so cookies baked with these will yield softer cookies. The type of fat you use will affect this, too. Butter yields a soft cookie, but butter conducts heat more quickly than other fats (shortening, margarine). This can cause the cookies to spread a lot when baking, yielding a thin, flat cookie that is too crisp. Another factor is the amount of fat in comparison to the other ingredients: the more fat, the flatter and crispier the cookies will turn out.

What I often do for cookie recipes that call for only butter is replace half of the amount of butter with shortening, or butter flavored shortening. This gives you the flavor and softness from the butter, but the shortening prevents the cookies from spreading out too much. Also, I find that using parchment paper to line the cookie sheets helps with the spreading issue, too (and makes for easy clean up!) Make sure you let the cookie sheets cool between batches; putting the dough on hot/warm cookie sheets will affect the baking time/spreading. Run the cookie sheets under cold water between batches to quickly cool them down.

When baking, make sure you bake the cookies for the shortest amount of time recommended and check for doneness. Cookies should be golden on the edges and centers should still be soft and just cooked through; cookies will continue to bake slightly as they cool.

Be sure not to over-mix the cookie dough, either. Doing so will incorporate too much air into the dough, resulting in flat, spread out cookies. Also check your oven temperature with an oven thermometer to make sure it is running at the correct temperature.

Soft starter can be found in every country in the world doing very important work and it is most likely something that the average person has never heard of. What is a soft starter? Well in order to best answer that question we turn to the biggest of the internet’s references Wikipedia. “A Soft Starter is a device or group of devices that serves to govern in some predetermined manner the performance of an electric motor. A soft starter might include a manual or automatic means for starting and stopping the motor, selecting forward or reverse rotation, selecting and regulating the speed, regulating or limiting the torque, and protecting against overloads and faults.”

Soft Starters – Industrial Uses

Many industrial applications are dependent upon motors (or machines), which range from the size of your thumb to the size of a railroad locomotive. Soft Starters can be built into the equipment, installed separately, installed in an enclosure along with other machine control equipment or installed in motor control centers. Soft Starter centers are multi-compartment steel enclosures designed to enclose many motor controllers and soft starters. It is also common for more than one soft starter to operate a number of motors in the same application. In this case the controllers communicate with each other so they can work the motors together as a team.

Soft Starter Solution

The alternative to a full voltage start is some sort of acceleration control, called a soft starter. Interest in this area has been growing, especially with today's focus on motor efficiency. All over the globe, local municipalities require that all new motor installations incorporate a means of soft starting the motor. The typical range for this requirement is between 75 and 200 hp. The Motor Efficiency Act, which went into effect in October 1997 and requires that all motors be at least 87% efficient, has also spurred interest.

There are many different approaches to soft starting via soft starters. The technique actually came into use many years ago, with the introduction of the primary resistance starter. It incorporates a resistor or series of resistors to the motor wiring to limit the voltage applied to the stator. With both voltage and current limited, the motor develops less torque, resulting in a lower rpm. Once the load is started, a RUN contactor is energized, shorting out the resistors. Full voltage brings the motor to its full rated speed.
