What's the best cake in Metro Manila you have ever tasted?

This is for a birthday. I don't want the usual Red Ribbon or Goldilocks.

A few years back, I tasted a good strawberry shortcake from Mandarin Oriental; however I doubt they are still selling that. Any suggestions? Kindly limit your answers to Metro Manila, preferably Makati area. Thanks.

The 'oriental Look', Gilding And Stenciling

The pure-coloured, deep, thick 'lacquer' appearance of old japanned work can be easily created without delving into age-old oriental techniques. The more coats of varnish you put over a colour, the deeper the finish will be. It is vital to rub down meticulously between coats with 600 grit wet and dry paper and water, or, for the final coat especially, pumice, rotten-stone and oil. Enamels have the purest colours, and should be laid on at least two coats thick, then covered with up to six coats of varnish.

The patient preparation of the base surface is essen­tial; you can try 'gesso' coatings for a perfectly flat base, either a proprietary acrylic product or inert powders like flour or decorator's filler added to paint. This covering is good for textured effects too. Tint the varnish with oil paints or oil-soluble aniline dyes, either to contrast or blend with the basic colour. Experiment with different colours in alternate varnish coats; on a red base, for instance, alternate blue and yellow-tinted varnishes will build up an unusually transparent green. These modern materials can equal the depth and beauty of the old lacquers, and are much more durable.

Adding stencilled patterns in these or other finishes is fairly simple, although if you choose to do it in more than one colour, the technique is more demanding. The paint you use to stencil must adhere well to the base, which is why matt is best, but you can key a gloss coat by wire wooling through the stencil itself, and enamels, acrylics or water-based paints with good clear colour can all be used. Multiple-colour patterns need a stencil for each colour, all traced off a master drawing and carefully registered so they fit together on the surface.

Acetate is the best stencil material for the more ambitious designs so you can see exactly where you are painting. Use a stiff round brush, and lay thin coats of paint on top of each other rather than one thick one, since runs under the edges of the stencil will mean you have to lift it off and wipe them. Always varnish over a pattern to protect it. Borders can be very effective round a floor area; if you want a light pattern on a dark floor, seal the stencilled pattern with varnish or shellac and then stain the floor, wiping the colour off the non-absorbent decoration.

For gilding and the decorative metallic finishes often seen on carvings, edges and mouldings, gilt paste wax rubbed into selected areas, buffed, and burnished will give an antique look. Metallic paints wiped like this and rubbed well in are more effective than when they are merely painted. Put the metallic powders in glazes for wiping back, or carry them in suspension in built-up coats of varnish for a deep iridescence. For highly carved picture frames and mouldings where you want the gold or silver as solid as possible, coat the area with shellac then dust the powder on thickly with the brush while it is still wet, and burnish it hard with a cloth pad when it has dried.
